Colombia Nestor Lasso Ombligon

Ombligon is a rare Colombian variety, and Nestor Lasso's Finca El Diviso is where it made its name. Onyx say this micro-lot took the number one spot at the World Barista Championship in 2022, and it has collected accolades since. Thermal-shock natural processing pushes it close to confectionery: chocolate ganache underneath, with watermelon candy, pomegranate and cherry stacked on top. Loud, sweet and genuinely strange.
