Eclipse (Blend)

Almost everything Onyx roasts sits on the lighter side. Eclipse is the deliberate exception, made for the traditional European palate that wants a darker, fully developed cup rather than a bright one.

Right now it is washed Caturra from Colombia, taken well past the point where most specialty roasters stop. Baker's chocolate and burnt sugar do the heavy lifting, with smoked vanilla underneath so it never flattens into just roast. Sweet and unapologetic. The base origin shifts with the season, so the coffee moves a little through the year while the character stays put.
