Monarch (Blend)

Monarch is the blend Onyx designed specifically to stand up to milk, and it is the one we would point a home espresso drinker to first. It combines Colombian and Ethiopian coffees, one washed and one natural, roasted long enough to build layers of caramelisation without cooking the fruit out of it.

The natural component is sugar-dense and binds to the fats in milk, which is why it still tastes like something in a flat white when lighter blends tend to disappear. Dark chocolate and molasses sit at the base, with dried berry and an almost red wine character on top. Thick and syrupy in the cup.
